2017 is upon us, and WE enter the year with two brews in the fermentation fridge. Special K is a Kølsch, and a revised Americipa. Americipa is our first beer where we have attempted to do water adjustments, and a new method of airating the wort. Its also the first brew with the addition of yeast nutrient. So quite exiting to taste the results.

Fermantation has proved to be a challenge. The Kølsch is supposed to be at approx 16 degrees, and Americipa at 18. With only one fridge, this was a challenge.A bit of trial and error, and I think we have it sorted..

The start of 2017 has been a time for researching new potential future recipes. A summer ale and a double Ipa are under planning, And I do have a liking to a great Saison. maybe with the late addition of tropical fruit.. or A wit with a touch of passion fruit, or rasberry, or Mango.. ahh these pesky choices..

Not to forget Twisted Wit, this one is going to be so exiting. A real ale for the summer months.

So quite a lot to look forward to..
