Great beer takes time.. sometimes way longer than we are willing to wait. Our best example is our Sorachi Samurai. Brewed in August, it is now almost perfect. and almost all gone..I did set aside 6 bottles for long term lagering, and to set a timeframe for its best enjoyed date.
So the best time to enjoy is approx 5-6 months after brewday. Sorry to say, I probably do not have that kind of patience. I am pretty sure a heavy hopped IPA has the same sort of timeframe. A pilsner or lager probably even longer
Our Girl Nation pilsner is finally getting close, and the Special K needs something like 8 weeks..
Then there is the brand new Hop Zombie now fermenting.So much hops needs time to mature properly.
Now where can I aquire that patience...
